Smoked Salmon Tartare

4oz Smoked Salmon Panamei, cut in small pieces
1 cucumber, peeled and cut in small cubes
½ red onion, finely chopped
1 tsp hot sauce of your choice
1 Tbsp olive oil
1 Tbsp soy sauce
1 handful fresh dill, finely chopped
1 handful fresh parsley, chopped
Juice of 1 lemon
Avocado slices, to serve

Cut the smoked salmon in small pieces.
In a bowl, mix all ingredients together: salmon, cucumber, red onion, chopped herbs and hot sauce. Add soy sauce, lemon juice, a drizzle of olive oil and mix well.
Refrigerate for 20 minutes before serving.

Serve with slices of avocado.
Garnish with fresh dill sprigs.
